Vegan snitzel salad
I finally moved into my new apartment and also mostly unpacked! :) I again have a nice kitchen I can cook in, I missed it so much! While I love cooking, I also don't like to spend all my time in the kitchen and I improvise a lot! This is the whole fun of cooking, right?! At my old flat, unfortunately, the kitchen was quite small and a bit outdated, also as I was renting a room from a family, I always felt like I'm occupying their space and/or the kitchen was left quite dirty and I don't like cooking in an untidy environment. Basic food hygiene, duh! Tonight I made a very simple, very quick and semi-healthy salad! Yes, with a glass of wine, delicious! I call it vegan schnitzel salad and used a red pesto dressing (due to the creme fraiche, it's not vegan but if you'd like you can easily substitute with a plant-based alternative!)
