Vegan snitzel salad
I finally moved into my new apartment and also mostly unpacked! :) I again have a nice kitchen I can cook in, I missed it so much! While I love cooking, I also don't like to spend all my time in the kitchen and I improvise a lot! This is the whole fun of cooking, right?!
At my old flat, unfortunately, the kitchen was quite small and a bit outdated, also as I was renting a room from a family, I always felt like I'm occupying their space and/or the kitchen was left quite dirty and I don't like cooking in an untidy environment. Basic food hygiene, duh!
Tonight I made a very simple, very quick and semi-healthy salad! Yes, with a glass of wine, delicious! I call it vegan schnitzel salad and used a red pesto dressing (due to the creme fraiche, it's not vegan but if you'd like you can easily substitute with a plant-based alternative!)
Ingredients:
- 1 vegan/vegetarian schnitzel (I used Quorn)
- 1 small romaine lettuce
- 1 tomato
- avocado (as much as you like! I only used a quarter though)
- anything else you have at home, this was my fridge before the weekend shopping.. if I had any, I would've added crutons, cucumber, onions, cheese etc.
For the dressing:
- creme fraiche (about 60 g or 1-1.5 tbsp)
- red pesto (I used siciliana but whatever you like!), 1-1.5 tsp/around 30 g if you'd like to measure, depending on your taste buds :)
- water to thin it into a sauce
Chop the salad ingredients while the schnitzel is cooking on the stove. Mix the dressing and add water (I added 1-2 tsp each time, about 6-7 in total) as you stir it into a dressing; it should be watery enough to easily pour onto the salad but thick enough so that it's just water with colour and still has some taste.
Slice the schnitzels, pour over the dressing (I saved some for the lettuce at the bottom and added the rest while eating) and voila.
Takes about 10 minutes to make, a delicious, healthy vegetarian (or vegan or meat-based - whatever you prefer) dinner.
The salad is around 530 kcal, the most comes from the schnitzel (205 kcal with 11 g of protein), creme fraiche (114 kcal) and of course, the pesto (about 126 kcal). These latter two can easily be cut down if you don't use 18% creme fraiche like I did :) but one with less fat or use a bit less pesto and add some herbs (I'd likely use oregano and basil).
I hope you'll enjoy it as much as I did, needless to say it was gone in a very short time :)
