After having this at the back of my mind for a long time now, I decided to grab the keyboard and join the amazing blogging community to share my favourite/not-so-favourite recipes to motivate all of you to sightly reduce your meat consumption as it's (the over-consumption of meat products) becoming a very serious contributor to climate change. I try to do my bits to reduce the waste I create (I also recycle everything), I cycle everywhere or take public transport etc. however a slight change in diet can go a long way. Our current dietary habits are simply not sustainable long term and that's the very very sad truth.
To start with, I'd like to clarify that I do eat meat and fish; mostly chicken and turkey, with the occasional beef and salmon/white fish. This is mainly because of personal preference. I do love all vegetables and fruits though (with a very very few exemptions) so I guess this helps a lot on reducing meat :) I don't usually eat pork as I don't really like it. Also, at 16 I went to a pig-slaughter (it's a traditional thing in Hungary - you wake up early, you kill the pig, bleed it out then spend the day preparing it into sausages, meat products etc.) and I was in such a shock afterwards that I stopped eating pork for years. Now I do eat very rarely, mostly if my mum makes it (she makes amazing pork schnitzels - it's to die for!) but I do not ever seek it out or buy and prep myself.
Eating meat and meat products is not just very yummy, quick and easy but also is very high in protein and contain all essential amino acids (these are 'building blocs' of your body that you cannot make hence we need to rely on food sources or other supplements to ensure you get them; I am a trained scientists in Chemistry so there will be the occasional easy-to-digest science too!). However the way many people consume meat today, including eating meat for breakfast, lunch and dinner and often for the snacks in between meals is just a bit too excessive. Of course I understand the resentment to change and also the various cultural habits that probably lead you (too) to consuming a lot of animal products. I do believe that balance here is the keyword and I cannot stand those hardcore vegetarians and vegans who aggressively attack people for eating meat. It is very counter-productive. I try to aim for having only one meal a day with meat (usually lunch or dinner), the rest is vegetarian/vegan meals. I very often don't have meat for days, I think these days I mostly have 3-4 meals per week with meat or fish (out of, if we count breakfast, lunch and dinner, 21 meals/week). I have to be honest, I don't strictly count these; some weeks it is likely more, some weeks it is less however I do aim for less rather than over-indulging.
I am currently living in a country which (for me it seems that) is slightly obsessed with eating meat for every meal. I get lunch at the work canteen (my company pays for it) and it is always something very delicious - we are very lucky with our amazing chefs in the building. 4 days it's usually meat or fish for mains, however every Tuesday is vegan Tuesday to promote eating more veggies. And oh my, they are creative! I am always amazed at the recipes they come up with, it's nutritious, delicious and healthy. I often just stick to the salad bar and make my own if it's red meat (again, it's personal preference - I am not a fan of rare meat and those red slices) and I include all sorts of yumminess: lettuce, cucumber, cheese, olive oil, bread, beans, whatnot.
I hope that my blog will inspire you on how to create meaty and meatless recipes (or reduced-meat recipes) so that we can all do our bit for the Earth. It's the only one we got so we need to look after it.
For a starter, I'd like to share one of my absolute favourite office breakfasts.
I am really not a morning person; I sleep in until as late as I possibly can and I never have time to actually cook for breakfast (I admire those who wake up early, bake a bread and make home-made toppings - yeah, definitely not me). I love quick and easy recipes and my morning recipes usually take 5 mins to prep either at home or in the office. I am not a big fan of spending the previous night in the kitchen either to make amazing creations for office breakfasts though I very occasionally do so.
I very often have yoghurt with fruits and nuts for breakfast; other days, overnight oats (if I don't forget to make them the previous day..) or other, very quick recipes.
I mean look at it! The colours and taste, it's just amazing.
It's a very simple Greek yoghurt (about 150g - I just took a few big spoonfuls out of the gigantic tub I buy) with sliced strawberries (about two handful), some blueberries (about one handful) and a bit of nuts (the nuts we have at the office - just picked and mixed some).
As I said I don't have time in the mornings, so I just put the fruits (unwashed and unsliced) into a box, the yoghurt into another and run off to work. Then, while I wait for my coffee to be done, I quickly wash and slice everything and voila, 5 minutes.
